Tiwul fried rice - a delicious food to replace fried rice

This time I want to discuss Tiwul Fried Rice.

Tiwul Fried Rice is made from Tiwul Rice.

Tiwul rice, a cassava dish, can be used as a rice substitute. Tiwul rice is widely consumed by people in Java. Tiwul can be found in Wonogiri, Pacitan, Gunung Kidul, and the surrounding areas. It is made from gaplek flour, which is dried and then ground cassava.

Here are some key points regarding the origins of tiwul rice:

- History and Context: Tiwul was popular as an alternative staple food during the Japanese occupation (around the 1960s) when rice was very difficult to obtain.

Tiwul fried rice is a traditional culinary innovation rooted in an alternative staple food during the Japanese occupation of Java, when rice was scarce and expensive. Made from gaplek (dried cassava), tiwul was once a mainstay for people in dry areas like Gunung Kidul to survive famine and served as a ration for fighters due to its long shelf life.

Over time, tiwul has transformed from a mere staple food for rural communities into a valued culinary dish, including a savory variation of fried rice. Tiwul fried rice is now favored for its unique flavor, chewy texture, and high-fiber nutritional value, often served with accompaniments such as salted fish and chili sauce.

- Main Ingredients: Made from gaplek, which is cassava that is peeled, dried, and ground into a coarse flour.

- Origin: Closely identified with the barren limestone mountains of South Java, such as Gunungkidul (Yogyakarta), Wonogiri, Pacitan, Wonosobo, and Blitar.

- Process: Gaplek is ground, sprinkled with water, shaken (di-oyek) until it clumps together, then steamed until cooked.

- Nutritional Value: High in fiber and lower in calories than white rice, making it a healthy alternative.

- Tiwul has now transformed from a staple food into a traditional dish with culinary value, often served with grated coconut, sweet Javanese sugar, or traditional side dishes (savory).
